Maqluba Spices

Maqluba Spices

Maqluba means "upside-down" in Arabic, and that is exactly how this Levantine favourite is served: layers of rice, meat or chicken and fried aubergine, cauliflower or potato, cooked in one pot and flipped onto a tray at the table, especially on Fridays. Our Maqluba Spices are made for that rice: turmeric gives it a warm golden colour, cinnamon, cloves and allspice add the sweet, deep aroma that rises when the pot is turned over, and cardamom, nutmeg and black pepper balance the richness of the fried vegetables.
