Qedra Spices
Qedra is a Palestinian dish closely linked to the city of Hebron, named after the clay pot, or qidra, in which lamb, rice and chickpeas are slow-cooked, traditionally in a wood-fired oven. Our Qedra Spices are made for that long, slow cook: turmeric gives the rice its golden colour, garlic and onion build a rich base in the broth, allspice and nutmeg add warmth as the lamb softens, and a little red pepper keeps the flavour lively.
