Seven Spices
Seven Spices is one of the most-used blends in Levantine home cooking, found in almost every Jordanian, Palestinian, Syrian and Lebanese kitchen. Its seven spices each play a part: allspice and cinnamon give the warm, slightly sweet base that makes kibbeh and kofta taste like home, cloves and nutmeg add depth to rice and stews, black pepper and cumin bring gentle heat and earthiness, and coriander keeps the blend fresh and balanced.
