Bulgur
Bulgur is wheat that is parboiled, dried and cracked, a staple of Levantine kitchens for generations and the base of tabbouleh and kibbeh. Its grains are nutty and lightly chewy, and they cook quickly. Soak fine bulgur in water for salads, or simmer coarse bulgur with tomato and onion for a hearty pilaf.
