Fine freekeh
Across Jordan and Palestine, a bowl of freekeh soup is a winter favourite, especially during Ramadan. Fine freekeh is cracked into small pieces, so it cooks faster than coarse freekeh and turns soft and silky, giving soup a smoky, nutty depth. Simmer it in chicken broth with onion and a little cumin.
