Chickpea
Chickpeas have been grown in the Middle East for thousands of years, and in Jordan they are the heart of hummus, falafel and fatteh. These creamy, nutty beans hold their shape well in stews and salads. Soak them overnight, then boil until soft for hummus, or soak and grind them raw to make falafel.
