Maftoul
Maftoul is a Palestinian pearl couscous, traditionally rolled by hand from bulgur and wheat flour, and often served at family gatherings with chicken and chickpeas. Its small, nutty pearls are soft and slightly chewy once steamed. Steam or simmer it in broth with onion and spices, then serve with chicken, in soups or in salads.
